The character has a real model
Apollo Creed appears in Rocky, in 1976, played by Carl Weathers. The character is openly built on Muhammad Ali: the talk, the staging, the entrance in costume, the way he picks an unknown for an exhibition fight.
Weathers was not a boxer but a professional American football player, who had been with the Oakland Raiders before turning to acting. That is where the build comes from. The Delphi Boxing Academy printed here is the character's gym in the films.
